Bitterballen are a pub food in the Netherlands. They have an odd texture, sort of like a ball of thick beef gravy. I made a mistake with my first bitterballen experience by buying and pan cooking some frozen ones purchased from the supermarket. They deflated into mushy lumps and the flavor did not outweigh the terrible consistency. Blech!
But that was entirely my fault.
Determined to try them properly, I ordered some at the bar across the street accompanied, of course, by fries and beer. What a difference!
The first one burned the roof of my mouth, so I wasn't able to taste the rest... but that first bite was delicious.
Eat them slowly.
(and don't make them at home)
